At the age of eleven, Dimitri started his career in food at his father's fresh seafood market. Initially he was put in charge of peeling buckets of shrimp, but he quickly found a talent in cooking. Dimitri not only learned how to cook from his toughest critic, his father, but also how to build a restaurant from the ground up. Fresh out of college, he quickly rose in the restaurant ranks when he purchased a failing restaurant and turned it into a nationally recognized hot spot. The Shanty Restaurant has become famous for Dimitri's signature dishes full of unique flavor and appeal: Whiskey Shrimp, Tequila and Orange Salmon, and The Blackened Conch Filet Mignon just to name a few. Dimitri's infectious enthusiasm, passion for food, and work ethic thats second to none have made The Shanty what it is today, a newly restored destination half-way between Chicago and Milwaukee. One might even draw an analogy between The Shanty's evolving menu to its ever changing building, recently reconstructed with local rehabbed barn wood and recycled materials. The Shanty is a fusion between old age decor and new age cuisine. In late 2010, Dimitri's father and siblings relocated the familys fresh fish market Captain Porkys directly next to The Shanty. The Shanty Restaurant is a well known Illinois treasure that has quickly been discovered by the national television world. Dimitri and his signature dishes have been showcased on The Food Network, NBC, WGN, ABC and various Chicago food and business publications. Although the publicity and recognition are very much appreciated, Dimitri's most important priority is making sure his customers are satisfied when visiting The Shanty.
